2011 Goals – Week 5 Update
Written on February 6th, 2011 by KC O'Connor
Overall, I’m making good progress on my 2011 goals. A line by line recap follows.
Fitness
Lower my body fat percentage from 32% to under 20% by July, 2011 and to under 12% by December 15th, 2011. – I’m sitting at 248 lbs & 29.6%.
Walk, bike, run, or swim 20 miles a week. I’ve accrued 58 miles, where I should be at 100 miles. Need to focus more effort here.
Follow the slow-carb diet. I’ve been following the slow-carb diet 5 1/2 days a week.

2011 Goals – Week 3 Update
Written on January 23rd, 2011 by KC O'Connor
I hit 250 this week, then celebrated a little. My goal is to weigh in next Friday at 245, and enjoy my birthday cake.
In order to meet this goal, i’m going to
- hit the treadmill on Monday and Wednesday mornings for at least 3 miles each day
- hit the bike on Tuesday and Thursday mornings for at least 6 miles each day
- stick to my meal plan, with no cheating
- drink lots of water, at least a gallon a day
2011 Goals Update – Week 2 1/2
Written on January 19th, 2011 by KC O'Connor
Another solid week, and a half. Down from 261 to 251 this morning. Cutting down on the snacking must have helped. I also got two days working from home due to the snow, putting 5 miles on the bike each day at lunch.
I’ve completed ten modules so far for the Force.com Developer 401 training. I’m making progress, but not as fast as I like.
I’m waiting for a part to be fabricated at Sierra Industries for the Robertson STOL. With the new paint, it will be like flying a new plane.
I’ve made great progress on the new theme for this website, and plan on putting it up over the next few days.
2011 Goals – Week 1 Update
Written on January 9th, 2011 by KC O'Connor
I did pretty well on my fitness goals this week following the slow carb diet, resulting in weight loss from 266 lbs to 261 lbs today. The hardest part is remembering to bring my lunch to work, and not snacking on junk after 10 PM.
I put in 2 miles on the treadmill on Friday and again on Saturday, and 4 miles on the elliptical bike today, for 8 miles total. I need to get on the bike more in the morning during the week in order to meet my 20 miles per week goal.
I also got a start on my professional goal this week, completing 4 modules of the Force.com Developer Training available on iTunes. Next week is going to be busy at work, but I am scheduling time so I can complete 3 modules.
As for my flying goals, I spoke with Mike at J&M Aviation. My Cherokee has been stripped down, but the Robertson STOL kit needs some attention. Since the repaint has taken a little longer than expected, J&M is going to complete the annual inspection as well.
Finally, I’ve started on re-working the theme and gallery for the website, but it may take a few more days to put it in place.

2010 was a bad year for this blog. I did not update it once.
For 2011, I’ve set personal, fitness, flying, financial, and professional goals. Improving this website, and this blog is one of those goals. Here are the rest of them.

Best of the Hudson Valley Vineyards
Written on June 11th, 2009 by KC O'Connor
I discovered Hudson Valley wine 2 years ago on the Shawangunk Wine Trail’s Around the World in 80 Miles event.
Fred, Lori, Jessica, and I visited all but one of the participating vineyards that day, taking many wine trail photos, and tasting many great wines.
This year, while not following the tour, Jessica and I are planning a return trip to some of our favorite vineyards.
Below is the list we plan on visiting.
11:30 – Baldwin Vineyards
176 Hardenburgh Road, Pine Bush, New York 12566
Baldwin had a delicious Strawberry dessert wine.
12:30-1:00 – Warwick Valley Winery and Distillery
114 Little York Road, Warwick, New York
Warwick is known for Doc’s Cider, Bourbon Barrel Aged Apple Liquor, and its Dirt Red wine. Lunch at Pane Cafe at Warwick Valley is great.
3:30 – Stoutridge Vineyard
10 Ann Kaley Lane, Marlboro, NY 12542
This is a newer vineyard with an interesting non-filtered wine. They have a very good Cabernet Franc which would go great with the grilled meats later in the evening. They are also introducing a distillery this summer.
5:00 – Benmarl Winery
156 Highland Avenue, Marlboro, NY 12542
With majestic views of the Hudson River Valley, this is the perfect spot to end the day, before heading home to enjoy some of the great wines we intend to find.
How to make Jessica’s Pineapple Tequila
Written on May 31st, 2009 by KC O'Connor
Jessica makes the best pineapple infused tequila. This has been one of my favorite summer drinks, since trying it out last year. I don’t know where she got this from, but its tasty.
We shared some last year at Camp O’Connor, again while camping in the Adirondack’s, and again today with friends at a sea food barbecue. Jessica says the secret is in finding the right pineapple. The riper the pineapple, the better. This last batch was probably the best yet.

Don’t take my word for it, though. Joe Schaefer, of Albany’s Dublin Underground says “That’s delicious, I wish I could serve it at the bar.” Joe’s brother in law, Rob, adds “That really takes the bite out of Tequila.”
Here is the recipe.
1 Liter of Gold Tequilla – Drinkable
2 Tablespoons of light Brown Sugar
1 Vanilla Bean
1 Ripe & Juicy Pineapple, cored & cut into cubes.
Let it sit at room temperature, stirring daily for a week, then serve it chilled.
I look forward to more of Jessica’s Pineaple Tequila at this year’s Camp O’Connor in July.
Finished the Brink 5K – My 1st 5K
Written on April 26th, 2009 by KC O'Connor
I finished my first 5K yesterday. I get to cross that off the New Year’s resolution list.
Jessica, thanks for registering us, and for the tee-shirts too. “WE RUN FOR BEER” was a hit with the other runners during the race.
Dad and Mom had my camera during the race. The picture above and many more are posted in the gallery.
Mr. Disare, thanks for cheering us on as we came through at the 1/2 way point. It was good to see a friendly face at that point, but seeing the finish line was the best part of the entire day.
